Double Chocolate Cookies With Vanilla Lime Basil Ice

Double Chocolate Cookies With Vanilla Lime Basil Ice

The cookies can be easily made and also a big fun for children. For the best result, I recommend best quality of Dutch processed cocoa. The combination between dark chocolate, lime, basil and vanilla ice is just heavenly perfect for summer. Sweet, chocolatey and sour you’ll have in one cup. If you don’t have time for baking the cookies, you can buy your favorite chocolate cookies.

For Cookies
Adapted from Easy Cookies

1/2 cup unsalted butter — softened
1 egg — beaten
2 tsp vanilla essence
1/4 cup raw sugar cane or brown sugar
1/4 cup white sugar
1 1/8 cup half flour and half Dutch processed cacao
1/4 tsp salt
1/4 tsp baking soda
1 cup semisweet chocolate chips

Preheat oven to 350F

Combine flour, Dutch processed cacao, salt and baking soda in a bowl. Set aside
In a mixing bowl, cream the butter and both sugars until well combine. Add the beaten egg and vanilla essence. Beat again. Sift flour mixture to the creamed mixture. Mix well and add chocolate chips

Drop by spoonfuls onto ungreased cookie sheets and bake for 7-10 minutes or until set

For Ice
Adapted from Leo Garces of Posada and Lodge La Salamandra

Your favorite vanilla ice cream
Lime juice
Basil — thinly chopped


Combine well vanilla ice, lime juice and chopped basil

Make smaller parts of each chocolate cookies then add to ice mixture. Combine well and serve

    is vanilla essence = vanilla extract?

      Gigi, from what I Google it says yes you can use vanilla extract or vanilla essence but I’ll have to ask Mindy for sure later (she’s sleeping now LOL) because she might know better than me 😀 It does looks so easy and perfect for hot summer day.

      Hi Gigi, you can use either vanilla extract or vanilla essence. The extract is stronger than essence. Happy baking.
